I was fooling around in the kitchen a few days ago with some ingredients because I was craving ice cream and I did not have any. However, I had frozen raspberries, heavy cream, sugar, almond milk, dark chocolate and crushed ice. Something went ding in my head and said, “Hey why not make your own.” However, I did not have an ice cream machine or device of any kind. All I have was my smoothie blender.
Therefore, I got the smoothie blender out and poured a cup of frozen raspberries into the blender cup with a ¾-cup of heavy cream, 4 tablespoon of sugar, 2 dark chocolate chunks, and ¼ cup of almond milk and a tiny bit of crushed ice. Then, I blended the ingredients away with the smoothie blender for about two to three minutes until I ended up with this smooth creamy red raspberry dark chocolate-chipped ice cream like mixture.
However, I did have to stop the blender a few times, give the ingredients a good shake, and mix together with the spoon to help keep the blender blades spinning easily so my ingredients would mix. You may have to do the same if your blender does not have high speed like mine.
Anyways, once I got the smooth creamy ice cream mixture, I placed the cup of creaminess into the freezer for thirty minutes. After, I took it out and ate away. Surprisingly, the red raspberry with dark chocolate chunks tasted like pure ice cream heaven. It was delightful.
Although, I will say the ice cream was more like soft serve than hard served, which was fine by me because I like my ice creams soft and smooth anyways. It is much easier too scoop up with a spoon this way.
I can definitely say I will be making this frozen berry chocolate ice cream treat again very soon.
