In this household, chocolate chip cookies are the #1 cookie to eat! However, we don't always like just chocolate chip cookies. We like to turn our chocolate chip cookie dough into chocolate chip almond cookie dough for making almond chocolate chip cookie bars that are just as delicious to eat with the same chocolaty goodness of a chocolate chip cookie, but with a bit of crunch and nuttiness.
Place the melted butter, vanilla and almond extract, egg and yolk, sugars, baking soda and flour into a mixing bowl and combine them together with a mixing spoon, hand mixer, or kitchen aid mixer until you have a cookie dough that is a bit oily and soft.
Press the dough into a 9 x 13 inch cookie sheet that is about an inch deep. Make sure it is evenly pressed in.
Sprinkle the chocolate chips and chopped almonds onto the top of the pressed in cookie dough and press them into the dough gently.
Bake the almond chocolate chip cookie bars at 375 degrees for about 15 minutes or until golden brown and slightly firm.
Remove them from the oven and allow them to cool for 30 minutes. The longer the bars cool the easier they are to cut into perfect square like bars.
Slice the bars up and place them into a sealed container and eat them within two weeks for a tasty chocolate chippy treat.
