Okay, so the other night my boyfriend and I had crock-pot chicken. It was tender and delicious, but we had so much left because we cooked a whole 5-pound chicken. Now, in this household we do not like wasting food so I decided to shred up the left over chicken and put it into some homemade barbeque sauce for pulled barbequed chicken sandwiches. “Oh my!” It was so delicious. We even topped the sandwiches off with a little bit of cheese.
1. Place your shredded chicken into a medium sized saucepan alone with your sliced and diced vegetables. Then, pour in a few cups of the BBQ sauce until the shredded chicken and vegetables are coated in it very well. Next, place the pot of food onto a stove burner and warm it up on medium heat with a lid on for about 10 to 20-minutes. Make sure you stir occasionally.
2. Slice open your bulkie rolls and scoop some of the warmed up pulled barbequed chicken and veggie mixture onto the rolls and top of with shredded cheese if you desire. Then put the sandwich together and eat up for some yummy simple to make pulled chicken sandwiches that will be loaded with plenty of BBQ flavor.
