Berry cheesecake is one of my favorite desserts. My recipe is extremely easy to make and you will love how basic the ingredients are. Best of all, you will love eating this scrumptious treat.
36-Ounces of Cream Cheese (4 ½ Cups)
1 Cup of White Cane Sugar
Teaspoon of Vanilla Extract
6 Tablespoons of Whip Topping (I use cool whip)
1 ½ Cups of Frozen Berries
10-Ounce Box of Cinnamon Teddy Grahams or Pre-made Graham Cracker Pie Crust
6 Tablespoons of Melted Butter
(If you are making your own crust)
1. If you are making your own crust, grind up the Teddy Grahams in a food processor until they become crumbs. Then, melt the butter, pour it into the processor with the grahams and blend the ingredients until the cookie crumbs are damp. Then, scoop them out of the food processor into a pie dish or a deep square casserole dish that is about the same size as a pie dish, and press the butter crumbs down into it and set the dish aside.
2. In a mixing bowl, add in the cream cheese, cane sugar, vanilla and white topping. Beat the ingredients together with a mixing machine on medium speed for 60-seconds, or until you get a creamy cheesy sweet mixture that is thick and smooth in texture. Then, scoop the mixture onto the graham crust using a spatula. After, smooth the cheesy mixture out evenly over the crust using the spatula.
3. Next, pour the frozen berries over the top of the cheesy layer and sprinkle with some sugar if desired. After, place the berry cheesecake into the refrigerator to set up for about an hour.
4. As soon as the cheesecake has firmed up slightly, you can cut into it and serve it up for a tasty sweet and tart cheesy berry dessert.
