A great way to get your serving of protein, vegetable, fruit and grain into your diet is by cooking up and eating up a beef and veggie stir-fry with mangoes and teriyaki sauce served over white rice. It is full of savory and sweet flavor and is sure to satisfy your taste buds and tummy.
Stir-Fry Beef or Steak Tips Cut into Strips
Sliced Bell Peppers of Any Color (I use red, orange and green)
Two Mangoes Peeled and in Bite Sized Chunks
Two Carrots Peeled and Sliced Up into Round Bite Sized Pieces
Cup of Frozen Water Chestnuts
Couple Handfuls of Chopped up Broccoli
Couple of Handfuls of Snow Peas
Bottle of Organic Honey Teriyaki Sauce (You could make a homemade one instead)
White or Brown Rice (Get enough to serve however many people will be at your table for dinner)
1. Add a tablespoon of vegetable oil to a wok, place the wok onto the stove burner and turn it on medium heat to get it hot.
2. As soon as the wok is hot toss in the beef, veggies and mangoes. Cook these ingredients up until the beef is cooked and the veggies and mangoes have a nice sautéed appearance to them. This takes about 5 to 7-minutes.
3. Cook up the type of rice you want as the stir-fry is cooking or before handle. Follow the cooking instructions that come with the type of rice you decided to use.
4. Once the stir-fry and rice are ready, scoop some rice into bowls or onto plates and serve the stir-fry over the top. Next, drizzle the honey teriyaki sauce over the top and enjoy a tasty meaty stir-fry that will nourish you and fill you up.
